Home Made Instant Miso Soup

Save time making miso soup without pans!
Nutritious and tasty.

Ingredients:

100g mugi miso (young or fermented)
2 packs of smoked bonito flakes (6g)
a bit of enokidake, cut off the bottom and cut in half or 3 pieces
a bit of dried wakame, soak in water until soft
a bit of spring onion, finely chopped
180ml hot water (per person)

Serves: 6 bowls
Cooking & Preparation Time: 10mins

Method

(1) Using a  Japanese mortar (suribachi) and pestle, grind the smoked bonito flakes until powdery.
(2) Add 100g mugi miso, and blend thoroughly, crushing the grains.
(3) Put 1 tablespoon of the mixture in each serving bowl, pour 50ml of boiling water and mix well with small whisk until mostly dissolved. Add enokidake and wakame, then add the rest of the hot water and mix well. Garnish with spring onion to taste.

Tips

The hot water should be brought just boiling point, and then poured, each time.
This can be kept in an air tight container in the fridge for a long period, very useful for making a single portion of miso soup when you don't have time to cook.
Any ingredients which don't require a long cooking time are suitable as toppings; tofu, fu (made of gluten), finely sliced leek, daikon sprouts etc, can be served.
